I currently have a Fios Quantum Gateway (G1100) from Verizon, for router and WiFi. I want to get the Turris Omnia, and connect that to the Fios Quantum Gateway (G1100). The Fios Quantum will then just bring the Fios internet into the house. I guess that is a “bridge” setup. And the Turris Omnia will be the in house router and WiFi access point. Can I do that with the Turris Omnia?

You should check if your Fios Gateway is capable of bridging. I don‘t know this device. Think about ipv4/6, network prefix delegation, firewall
Yes you can do it, you could put the G1100 device in bridge mode or if you have Verizon Fios with a ONT you could switch to Ethernet and just use the Turris as the main router.
